WINEMAKERS COMMENT
This is the first English Sparkling wine produced to biodynamic standards. Both Seyval Blanc and Johanniter (an offspring of Riesling) produce excellent fruit for sparkling wine. They are particularly well suited to organic growing as they are very resistant to both downy and powdery mildew.We hand select only the best bunches for this Cuvée and then ‘whole-bunch’ press them. The juice is settled and fermented before bottling into the classic champagne bottles for the ‘Traditional Method’ in-bottle secondary fermentation. This wine had minimum 18 months ‘on-the-lees’ in the bottle before riddling, disgorging and adding the 7.3g per litre (sugar) ‘dosage’.

TASTING NOTES
Fine mousse of persistent bubbles. Dry, fresh and tangy tropical fruit palate with complex yeast flavours. Exceptionally good toasty notes due to long period of minimum 18 months 'on the lees' during bottle fermentation.
