GRAPE VARIETY: Seyval Blanc from our vineyard at Bodiam Castle 80%; Johanniter (bred from Riesling) from Sedlescombe 20%.

WINEMAKERS COMMENT
Both Seyval Blanc and Johanniter produce excellent fruit for sparkling wine. They are particularly well suited to organic growing as they are very resistant to both downy and powdery mildew.

We hand select only the best bunches for this bubbly and then 'whole-bunch' press them. The juice is settled and fermented before bottling into the classic champagne bottles for the 'Traditional Method' in-bottle secondary fermentation. This wine minimum had 18 months 'on-the-lees' in the bottle before riddling, disgorging and adding the 12g per litre (sugar) 'dosage'.

TASTING NOTES
Fine mousse of long lasting bubbles. Exquisite, fresh, tangy tropical fruity palate. Exceptionally good yeast and toasty notes due to long period 'on the lees' during bottle fermentation..
