The first English Sparkling wine produced to biodynamic standards. Fine mousse of persistent bubbles. Dry, fresh and tangy tropical fruit palate with complex yeast flavours. Exceptionally good toasty notes due to long period of minimum 18 months 'on the lees' during bottle fermentation. Both Seyval Blanc and Johanniter produce excellent fruit for sparkling wine. We hand select only the best bunches for this Cuvée and then ‘whole-bunch’ press them.

In keeping with Sedlescombe’s eco-philosophy of ‘minimal packaging’ this fizz does not have a capsule covering the cork and wire hood, in the way that other champagnes and sparkling wines do.

Lovely bright and intense rosehip colour with a steady fine stream of bubbles. On the nose 36 months of lees ageing is evident with aromas of toast and yeast, which are balanced by subtle fruit aromas of quince and blackcurrant leaf. The fruity nose continues onto the palate, where the initial explosion of mousse is followed up by the sweetness stone fruits and balanced with the good acidity of crab apples. The finish is long, and well structured
