Pinot Noir, the classic Champagne variety and the relative newcomer ’Auxerrois’ both produce the excellent fruity acidity required for producing top quality sparkling wines. Combining these two varieties produced this tip-top well balanced bubbly from the 2009 vintage. 

We hand select only the best bunches for our sparkling wines and then gently ‘whole-bunch’ press them to minimize the extraction of phenolics (tannins). The juice is settled and fermented before bottling into the classic champagne bottles for the ‘Traditional Method’ in-bottle secondary fermentation. This wine had in excess of 36 months ‘on-the-lees’ in the bottle before riddling and disgorging to remove the lees sediment and adding the 15g per litre ‘dosage’ to add the balancing touch of sweetness.

TASTING NOTES Lovely bright and intense rosehip colour with a steady fine stream of bubbles. On the nose 36 months of lees ageing is evident with aromas of toast and yeast, which are balanced by subtle fruit aromas of quince and blackcurrant leaf. The fruity nose continues onto the palate, where the initial explosion of mousse is followed up by the sweetness stone fruits and balanced with the good acidity of crab apples. The finish is long, and well structured
