WINEMAKERS COMMENT
Pinot Noir, the classic Champagne variety and the relative newcomer 'Kerner' both produce the excellent fruity acidity required for producing top quality sparkling wines. Combining these two varieties along with 'free-run' juice from the Regent crush produced this tip-top well balanced bubbly from the 2008 vintage. Free-run juice is ideal for sparkling wines as it is very low in phenolics (tannins).

We hand select only the best bunches for our sparkling wines and then ‘whole-bunch’ press them. The juice is settled and fermented before bottling into the classic champagne bottles for the ‘Traditional Method’ in-bottle secondary fermentation. This wine had a minimum of 18 months ‘on-the-lees’ in the bottle before riddling, disgorging and adding the 15g per litre (sugar) ‘dosage’.

TASTING NOTES
"Lovely bright and intense rosehip colour with a steady fine stream of bubbles. On the nose 18 months of lees ageing is evident with aromas of toast and yeast, which are balanced by subtle fruit aromas of quince and blackcurrant leaf. The fruity nose continues onto the palate, where the initial explosion of mousse is followed up by the sweetness of stone fruits balanced with the good acidity of crab apples.
