On the nose 36 months of lees ageing is evident with aromas of toast and yeast, which are balanced by subtle fruit aromas of quince and blackcurrant leaf. The fruity nose continues onto the palate, where the initial explosion of mousse is followed up by the sweetness stone fruits and balanced with the good acidity of crab apples.
